http://www.cajun-recipes.com/html/bread/40211.htm Chili Con Corn Bread Two 15 oz cans chili or 4 cups home made chili 1 egg slightly beaten 1/2 cup milk 2 tbs vegetable oil or melted shortening 1 cup yellow corn meal 1-1/2 tsp baking powder 1/2 tsp salt 1 cup (4 oz) grated sharp cheddar cheese, divided Preheat oven to 400F. Pour chili into lightly greased 8 inch square baking pan. Combine milk, corn meal, baking powder, salt and 1/2 cup cheese. Stir until smooth; pour over chili slowly. Sprinkle remaining 1/2 cup cheese evenly over batter. Bake 30 to 35 minutes. Cool 5 minutes. Makes 4 to 6 servings. ************************ I don't know how truly Cajun it is, but I've made it before and I think it's time to make it again.

i got the night off.. kinda. the hubs is fixin his famous burgers and i'm roasting the broccoli to go along with. easy night.
last night i had a fiesta salad but mine didn't have the beans, my stomach is tore up enough on it's own, didn't need to add all that. lol |

To me it's pretty much a stand-alone meal. You don't really need anything else with it unless you want to add something. You got your carbs, protein, and cheeeeeese, and I'm sure you could add more veggies to it!
