tonight: left over coconut rice with red beans and peppers added to it and bbq chicken and jiffy cornbread.

NikkiNukka, that is reminding me that I might wanna make some of this real soon:

Chili Con Corn Bread
Two 15 oz cans chili or 4 cups home made chili
1 egg slightly beaten
1/2 cup milk
2 tbs vegetable oil or melted shortening
1 cup yellow corn meal
1-1/2 tsp baking powder
1/2 tsp salt
1 cup (4 oz) grated sharp cheddar cheese, divided
Preheat oven to 400F. Pour chili into lightly greased 8 inch square baking pan. Combine milk, corn meal, baking powder, salt and 1/2 cup cheese. Stir until smooth; pour over chili slowly. Sprinkle remaining 1/2 cup cheese evenly over batter. Bake 30 to 35 minutes. Cool 5 minutes.

Makes 4 to 6 servings.

mmmm that sounds real good!!!!! i think may have to try that and make some homemade chips to go with it or add some shredded chicken breast to it.

i got the night off.. kinda. the hubs is fixin his famous burgers and i'm roasting the broccoli to go along with. easy night.

last night i had a fiesta salad but mine didn't have the beans, my stomach is tore up enough on it's own, didn't need to add all that. lol

OF COURSE YOU'RE INVITED!!!!! just make sure to get the non stop flight to boston and you're good to go lmao. but tis real easy to make!

all you need is:
2 cups of rice
1 can of coconut milk
1 teaspoon of salt (optional but i like it)
and some cinnamon. if you cang et the sticks thats even better!
and t tablespoons or so of butter

boil the rice and strain it then add the coconut milk, butter, cinnamon and salt and stir up real good and let simmer and stand and you got good coconut rice. my mother puts shredded coconut flakes in it for fare sometimes.

To me it's pretty much a stand-alone meal. You don't really need anything else with it unless you want to add something. You got your carbs, protein, and cheeeeeese, and I'm sure you could add more veggies to it!

That sounds good too... I make mine with ground chuck though.

Homemade chips.. wait a minute, are you a chef? lol
