Default Crockpot crazy? Please share!

It's that time of year when I work my crock pot like mad! I'm always looking for new recipes to toss in my slow cooker and thought it would be nice to start a thread. If you've got a tried an true recipe please share it. Nothing like coming home from work to a house full of the smell of food

White Chicken Chili

This is a fave in our house. I found this recipe about 5 years ago or so and it's always a hit. I've made some adjustments:

* I put 2 whole boneless skinless chicken breasts in the pot uncooked. In the last half hour or so I shred the chicken in the pot. It comes out best for our tastes this way. Plus I don't like to cook anything before adding to the pot if I don't have to.
* I almost double all the seasonings except the salt.
* I do not chop the tomatillos. I rip them in half right in top of the chicken. If you've ever used canned tomatillos you know there's no way you can chop them. They're too mushy. don't skip on the tomatillos though. The grocery stre has them in the Mexican food aisle.
* I use ground cumin and coriander rather than seeds.
* I use a can of chicken broth rather than measuring out a cup.
* I thicken the chili at the end with flour. I mix some flour in a bowl with some of the broth and then stir it in.
* I add the lime juice right before serving. Do NOT skip the FRESH lime juice. It gives it that extra something. When I have a large group that I'm serving I serve a lime wedge with each. Otherwise, I just juice the lime ino the pot and stir before ladling.
*if you like it spicy add a small can of diced jalapeņos. For serving to my toddler I just use the chiles.
* I always have extra sharp cheddar on mine. But sour cream would be good also.

Here's a new one I tried today for meatless Monday and it's a keeper!

Moroccan Lentil Stew

I made some variations off the bat:
*replaced the carrot with 2 small sweet potatoes
*used dried garbanzo and black beans- soaked overnight
*added 4C of water instead of 2. Next time I'll do 3C and I think it'll be perfect
*turned the heat to high for an hour since I had dried beans in there. Then turned to low for another 7ish hours
*added 1.5 tsp salt
*lessened the cayenne to a dash for my toddler's sake
*used 2.5 tsp garam masala

Really good and I'm sure it's good as written. I just can't help hanging recipes for our taste though . If you wanted to add meat- boneless, skinless chicken thighs would stew wonderfully in this.

There is actually an app made by crocpot and has a ton of yummy recipes. Also don't forget to use your crocpot liners to help with clean up.
